Gluten Free Oatmeal Banana Pancakes

So I can’t claim these pancakes as Paleo since they have oats in them. Oats are a bit of a grey area in the Paleo world, some people like them if you ferment them first (soak overnight in yogurt or acidic medium) and some avoid them all together avoid dealing with the insulin spike they seem to create. I enjoy them as a treat like these super yummy pancakes and occasional homemade granola. So if you miss your oats or you just want to treat yourself you’re welcome to give these pancakes a try!

Oatmeal Banana Pancakes

1 cup milk/almond milk/ coconut milk
1 cup old fashioned oats
1 Tbsp olive oil/melted coconut oil/melted ghee
2 eggs beaten
1 Tbsp honey
1/2 cup cassava flour
1 tsp gluten free baking powder
1/4 tsp salt
1 ripe mashed banana

1. Combine oats and milk and let sit for 5 minutes
2. Add oil, eggs and honey then mix well
3. Add in dry ingredients
4. Add in mashed banana and mix till completely combined.
5. Spoon about a 1/3 cup of batter on a medium high skillet lightly oiled with ghee and cook through.

Makes about 6 pancakes
